Tomato Pie
Ingredients:
- tomatoes, sliced thin - 4 medium
- salt -
- pie crust - 1
- mayonnaise - 3/4 cup
- mozzarella cheese - 2 cups
- Parmesan cheese - 1/4 cup
- garlic, minced - 3 cloves
- basil leaves, chopped - 8 - 10 fresh leaves OR 1 t dried basil
Instructions:
Place tomatoes in a strainer, sprinkle salt over them , let set for a few minutes. (The salt draws out some of the moisture). Bake the pie crust package directions, cool. In a bowl, combine mayonnaise, mozzarella cheese, Parmesan cheese and garlic. Stir well; set aside. Blot tomatoes with paper towels to remove excess moisture. Layer tomatoes and basil in the pie crust. Spread cheese mixture over the top. Bake in a preheated 350 degree oven for about 40 minutes or until top is golden brown. (Place a rimmed baking pan under the pie in case the pie spills over.)
