Zucchini Fritters and Dip
Ingredients:
- vegetable oil - for frying
- grated zucchini - 3 cups
- diced onion - 1 cup
- eggs - 2
- flour - flour
- baking powder - 1 tsp
- chili powder - 1/2 tsp
- salt - 1/2 tsp
- black pepper - 1/4 tsp
- mayonnaise - 1 cup
- lime juice - from 1/2 lime
- chili powder - 1/2 tsp
Instructions:
In a bowl, combine zucchini, onion and eggs; stir well. In a second bowl, combine flour, baking powder, 1/2 tsp chili powder, salt and pepper; stir. Fold dry ingredients in the zucchini mixture.
Pour oil into a skillet to a depth of 1/2 inch; heat to medium.
Place heaping tablespoon of batter in hot oil, fry 5 - 6 fritters at a time. Cook for 2 - 3 minutes on each side. When centers are firm, remove from oil; place on paper towel.
Prepare dip -- in a bowl, combine mayonnaise, lime juice and 1/2 tsp chili powder; stir.
