Zucchini Fritters
Ingredients:
- zucchini, grated - 1 1/2 pounds
- salt - 1 t
- flour - 1/4 cup
- grated Parmesan cheese - 1/4 cup
- garlic, minced - 2 cloves
- egg, beaten - 1
- Kosher salt and fresh ground black pepper - to desired taste
- olive oil - 2 T
Instructions:
Place grated zucchini in a colander over the sink. Sprinkle 1 t salt over zucchinni, gently toss to combine; let sit for 10 minutes. Drain and completely dry zucchini.
In a large bowl, combine zucchini, flour, Parmesan, garlic and egg; season with salt and pepper.
In a skillet, heat olive oil over medium high heat. Scoop tablespoons of batter into oil and flatten with a spatula. Fry until golden brown, about 2 minutes. Flip and cook other side for 1 - 2 minutes.
Garnish with sour cream. Serve immediately.
