Zucchini Fritters with Chili Lime Mayo
Ingredients:
- mayonnaise - 1 cup
- juice form 1/2 lime -
- chili powder - 1/2 t
- grated zucchini - 3 cups
- diced onion - 1 cup
- eggs - 2
- flour - 1 cup
- baking powder - 1 t
- chili powder - 1/2 t
- salt - 1/2 t
- pepper - 1/4 t
Instructions:
Prepare dip -- In a bowl combine and stir together mayonnaise, lime juice and 1/2 t chili powder; set aside.
In a bowl combine zucchini, onion and eggs. In another bowl stir together flour, baking powder, 1/2 t chili powder, salt and pepper. Fold dry ingredients into zucchini mixture. Heat 1/2 inch oil in a skillet on medium heat. Place heaping tablespoon of batter in oil, frying for 2-3 minutes per side. When centers are firm, remove fritters from oil, drain on a plate lined with paper towel. Serve hot with prepared dip.
