Beer, Macaroni and Cheese with Bacon
Ingredients:
- rotini noodles - 16 ounces
- bacon cooked and crumbled (reserve 2 T bacon grease) - 6 slices
- butter - 1 T
- onion, diced - 1 small
- flour - 3 T
- Dijon mustard - 2 T
- beer - 12 ounces
- milk - 2 1/2 cup
- shredded cheddar cheese - 2 cups
- shredded Parmesan cheese - 1/3 cup
- salt and pepper - to desired taste
Instructions:
Cook pasta to al dente, drain; set aside.
Add 2 T reserved bacon grease and butter to saucepan, on medium heat, melt butter, add onion and cook until transparent. Add flour, stir until it becomes paste like and light golden brown. Whisk in mustard and beer, stir constantly. Slowly add milk, stirring constantly. Simmer over medium heat until mixture is smooth and thick (5 - 10 minutes). Mix in cheeses, stir until completely blended, add bacon and pasta. Salt and pepper to desired taste. Serve immediately.
