Apple Crisp Stuffed Apples
Ingredients:
- apples - 8
- butter - 4 T
- brown sugar - 1/3 cup
- cinnamon - 1/2 t
- flour - 1/2 cup
- oats - 1/4 cup
- brown sugar - 1/3 cup
- sugar - 1/4 cup
- salt - 1/4 t
- cinnamon - 1/2 t
- butter, chilled, cut into cubes - 4 T
Instructions:
Prepare crumble topping -- in a bowl, whisk together flour, oats, brown sugar, sugar, salt and cinnamon. Add 4 T butter, cut in with a pastry blender until mixture is crumbly; set aside. Peel and chop 4 apples.
In a saucepan, over medium heat, saute chopped apples, 4 T butter, brown sugar and cinnamon for 8 - 10 minutes or until apples are tender. Remove from heat. Cut the tops off 4 apples, with a spoon remove the flesh. Discard the flesh. Just remove enough flesh to make a bowl for the filling. Fill scooped out apples with apple filling. Top with a generous amount of crumble topping.
Place stuffed apples in a baking dish. Bake in a preheated 400 degree oven for 10 - 15 minutes until crumble topping is crispy. Serve warm with a scoop of ice cream and caramel sauce drizzled over top.
