Grape Cucumber Salad with Poppy Seed Dressing
Ingredients:
- grapes - 2 cups
- baby cucumbers, sliced - 2 cup
- grape tomatoes, halved - 2 cup
- vinegar - 1 T
- canola oil - 2 T
- lemon juice - 2 T
- ground ginger - 1/8 t
- strawberry Greek yogurt - 1/2 cup
- poppy seeds - 2 t
- salt - to desired taste
Instructions:
In a bowl combine grapes, cucumbers and tomatoes; set aside. Prepare dressing --
In a bowl whisk together vinegar, canola oil, lemon juice, ground ginger, strawberry Greek yogurt and poppy seeds, season with salt. Slowly drizzle dressing over salad until well coated, don't overdo it. Place in refrigerator to chill or serve immediately.
