Cheesey Ham and Potatoes
Ingredients:
- medium potatoes - 4
- diced cooked ham - 1 c
- onion, chopped - 1/2 c
- butter or margarine - 1/3 c
- flour - 3 T
- milk - 1 1/2 c
- shredded Cheddar cheese - 1 c
- salt - 3/4 t
- pepper - dash
- extra cheese for sprinkling on top -
Instructions:
Peel and cube potatoes. Place potatoes in large pan with water and bring to a boil, simmer for 30 minutes; drain. In a small pan, melt butter, add flour, salt and pepper; mix well. Slowly add milk, stir continuously until thickened. Add 1 cup of shredded cheese; stir until melted. Pour potatoes, ham, and onion mixture into a greased 9 × 13 inch baking dish. Pour cheese mixture evenly over top. Sprinkle top with shredded cheese. Bake in a preheated 350 degree oven for 30 minutes.
